Pesto and Cream Cheese Sandwich

Like many families, Tea Time Snacking was a daily evening staple in my household growing up. And usually we reached for standard fare like chips and some pre-packaged snacks but whenever mom made sandwiches, it was more like “an evening party time”. I always enjoyed those sandwiches and often make for my family but with some of my own flavor ideas.
Today’s recipe is my creative spin on Tea Time Cream Sandwich - Pesto Cream Cheese Sandwiches. It has two layers; one of nutty basil pesto and another of cream cheese, sandwiched between 3 slices of lite white bread. Nutty pesto and cream cheese are great complement to each other.
This recipe is perfect for evening snacking, for breakfast and you can also pack some pesto sandwiches for kids to school.

1. Slice - Remove the sides of all bread slices.2. Spread - Spread basil pesto on two slices of bread . Spread cream cheese on other two slices and a pinch of salt and black pepper. Leave the remaining two slices plain.

3. Sandwich - Place pesto spread bread at the bottom with pesto side up, top it with cream cheese spread bread with cream cheese facing up. Top it with plain slice of bread.4. Serve - Slice the sandwich into triangles or quarters and serve with cup of hot tea or coffee.
Savita's Notes:
You can also try some other variations of pesto sandwiches like with cilantro pesto or roasted bell pepper spread. Also substitute white bread with whole grain bread to have some wholegrain goodness.© Chef De Home. Post content including video and photos are copyright protected.

:) Erica, You can make some pesto at home with any fragrant or peppery greens, how about Arugula , mint or cilantro? or layer some smoked ham slices in one part of sandwich and some sharp cheese in other. You can also try chutney or jam in one layer and cream cheese in other. Hope it helps.Erica
Emergency, I making these sandwiches for a book-club party tonight, but I am out of pesto, help me out. I have cream cheese and bread only.Savita
@GreekGoddess, you can make pesto at home and skip the nuts. With Parmesan and Basil, it tastes good to me even without nuts. Also, you can try my - Roasted Bell Peppers and Goat Cheese Spread, in Dips and Spreads section. If you use this, you don't need Cream Cheese layer in sandwich, roasted peppers spread alone will taste very good.GreekGoddess
My son is allergic to nuts and I think pesto has nuts. Can u suggest some other ideas? I really wanna pack something other then Jam sandwich for him. thanks.Sunahri Seth
