I like sweet potatoes a lot, specially sweet potatoes with tangy yogurt dressing. Usually I roast whole sweet potato before dicing it to my salad, but for this recipe I have boiled the sweet potato till its fork tender. This healthy salad gets sweetness from honey and creamy texture from low fat yogurt. Perfect accompaniment for grilled meat or spicy dishes. This salad will win your friends and family's attention.

Ingredients
- 1/2 Cup Yogurt (low fat)
- 1 tbsp Honey
- 1/2 lbs Carrots (boiled or steamed per your liking, I prefer to boil'em until fork tender)
- 2 Sweet Potato (medium size boiled/roasted sweet potatoes)
- Salt and Black Pepper (to taste)
- 1/4 Cup Raisins
- 1/4 Cup Walnuts (or almonds roughly chopped)
Directions
- 1. Dressing - In a salad bowl, combine yogurt, honey, salt, black pepper with 1 tablespoon of water, mix well & keep aside.

2. Salad - Dice boiled carrots and sweet potato to half inch or (bite size) pieces, mix it with dressing. Just before serving, top it with few tablespoons of raisins and chopped walnuts or almonds(if using). Serve chilled or at room temperature and enjoy!

My husband never prefers to eat sweet potato salad I make. I think addition of carrots, raisins is a very good idea, have to try it. Allrecipes on your site are very good. thanks for sharing this recipe fortune with us.
