This is my take on the club sandwich and I am sure you will find it the best veggie club sandwich you ever had. The classic club sandwiches are so laden with meat slices, mayo and cheeses to contain enough calories for an entire day. This veggie sandwich gets a nice crunch from crispy and healthy bitter greens - frisee and baby arugula. I have used delicious potato wedges as a healthy alternative to meat slices. This sandwich is also kids friendly, so give it a try and let me know how you liked it.

Ingredients
- Sour Dough Bread (4 slices)
- 1 Potatoes (Medium, sliced into thin wedges)
- Frisee (6-10 leaves)
- Arugula (few leaves)
- 1 Tomatoes (Sliced)
- Salt and Black Pepper (to taste)
- 2 tbsp Thousand Island Dressing (preferably eggless)
- 1 tbsp Olive Oil
Directions
- 1. Spread potato wedges on a baking sheet, drizzle olive oil, salt and pepper to taste and bake at 400 degree for 10 minutes
- 2. Let the potato wedges cool down. To assemble the veggie club sandwich spread one table spoon of the thousand island dressing on slice of sour dough bread. Top it with tomato slice, 2- 3 potato wedges, and few leaves of bitter greens. Sprinkle salt and pepper to taste and top it with other slice of sour dough bread. Slice the sandwich in half and serve with your choice of chips and soup.
