Authentic Rava Idli

This is a daily essential in southern Indian cuisine, usually made with rava (sooji), also made with grind rice , smell of fresh idlli out of steamer will make you hungry any time of the day. Easy to digest for children and elderly.

Ingredients
- 2 Cup Semolina (also known as Rava / Sooji)
- 4 tbsp Yogurt
- 1/2 tsp Salt
- 1 tbsp Canola Oil (to grease the Idli molds.)
- 1/4 tsp Baking Soda
- 1 Cup Water
Directions

mix dry ingredients well in a mixing bowl
Additional Notes:
Do not add Baking Soda / Eno yet -

Add water and yogurt to the mix and stir till smooth paste is formed
Additional Notes:
If water seems to be less or soaked by dry mix, add small quantity of water carefully while stirring -

Add Eno / Baking soda to the paste and stir
Additional Notes:
do not stir too much and perform next steps quickly for better idlli -

Grease idli maker tray well with oil
Additional Notes:
this step will ensure your idlli will come out without breaking and easily. - 5. add small quantity of mix to each block in the idli tray, and place the tray in the steamer for 5-7 minutes, cover the steamer and once time is up, take it out and perform the toothpick test

6. scrape the idli from the tray blocks and serve hot with sambhar and chutney Additional Notes:
you can use a spoon or a idli scrapper to do this
