Melon Walnut Salad with Lite Lemon Dressing

Lets us start Monday with some fresh and lite salad. This simple 5 ingredient salad has juicy melon, healthy greens, and crunch of heart-healthy walnuts.

This is my first salad  towards- Only Salad for Lunch Week aka Green Week. I thought with starting with something easy, fresh and refreshing so that we can keep the momentum high and aim for - only salad for lunch.

Melon is very juicy and watery fruit which will fill you up without weighing down. A bowl of this salad is perfect to control hunger and get diet back on track. This is why I also kept dressing lite so that it does not make salad fatty...

...For the similar reason, I also used unsalted raw walnuts because only those can provide max healthy benefit. Salted and roasted walnut might taste good but they just increase sodium and fat in salads.

Sweetness of melon goes perfect with crisp fresh greens. If you like salads, I'm sure you will enjoy this one.

Ingredients

  • 1/4 Cup Walnuts (unsalted and raw)
  • 1/2 Honeydew Melon (half of a about 4-5lb melon)
  • 1 Bunch Baby Romaine (pre-washed 250 grams package)
  • 1/3 Cup Cranberries (or use raisins)
  • 2 tbsp Lemon (juice, juice of 1 medium lemon)
  • 1 tbsp Olive Oil
  • 1/4 tsp Salt and Black Pepper

Directions

  • 1. to make the dressing, in a bowl whisk together lemon juice and oil to make emulsion. Now add salt and pepper and whisk again.
  • 2. Peel and slice melon into 1-2 inch cubes.Add greens into a large bowl, add half of vinaigrette/dressing and toss well. Add dressed greens to individual plates, top with melon, walnuts, and raisins (or cranberries if prefer). Serve and enjoy! (serve remaining dressing in side to drizzle over melon as needed.)
