Hummus and Guacamole Meet in One Dip

Avocado is one of my favorite vegetable, its creamy texture always entices me and you already know my love for chickpea dips. I love experimenting various flavor combinations with chickpeas to make healthy and gluten free dips. Healthy or gluten free does not have to be boring. Today, jazzed-up my hummus dip with my favorite avocado to make creamy, rich yet delicious and healthy dip. It is like eating in Mexican and Mediterranean fusion restaurant. Well, idea was not just a fusion recipe, but was making it healthy. My husband and I love avocado and we can easily finish a bowl if hungry. I wanted to combine avocado with something to make our portion size more filling yet with less of avocado. I don't say avocados are bad for you. In-fact, these are loaded with good fats. But too much of any kind of fats is not good for health. Addition of chickpeas not only gave my otherwise called "guacamole" depth of flavor, but also made it healthy and filling. Veggie dippers are my personal favorites with creamy dips. However, everyone else in my family is dip and chip fanatics. So feel free to choose dipper of your choice. I served it with red radish, celery and corn chips.

Ingredients
- Garbanzo-Mole Dip
- 2 Avocado (small, fully ripe)
- 2 Cup Chickpeas (cooked, use one 16 oz can of chickpeas)
- 2 tbsp Tahini Paste
- 2 Lime (about 2 & 1/2 tbsp juice)
- 1/2 Jalapeno
- 1/2 tsp Red Pepper Powder
- 5 Garlic (garlic cloves)
- 1/2 tsp Salt (adjust per taste)
- 2 tbsp Olive Oil
- Garnish and Dipper for Serving
- 1-2 tbsp Olive Oil
- 1 Bunch Mix Vegetables (like radish, celery, carrots, corn chips)
- 2-3 tbsp Cilantro (rough chopped)
Directions

1. Prepare - Rinse chickpeas and get all other ingredient of dip ready. Remove seed from jalapeno if you prefer. -
2. With blender running slowly add 2 tbsp olive oil until chickpeas and avocado are smooth and well combined. (add additional 1 tbsp olive oil if mixture is difficult to combine). Garnish with few fresh cilantro leaves, 1/4 tsp red pepper, 1-2 tbsp fresh olive oil (optional) and serve with side of vegetables and corn chips. Enjoy!!
