Bruschetta with Tomato and Sweet Peppers

Sweetness of ripe sweet tomatoes and basil with mild crunchy bite of onions and sweet peppers – this is my quick appetizer recipe, loved by all family members. Not to forget, it is a wonderful way to add healthy dose of bright colored veggies to my family meal.
Bruschetta is an antipasto from central Italy and you will find thousand variations of Bruschetta toppings in cookbooks and cooking shows all around the world. However, in this recipe, I have just tried to capture all fresh veggie flavors with hint of lemon and fresh basil. I love this recipe because it is simplest thing in the world to make and has a very satisfying flavor and taste.
Feel free to play with topping combinations, like only tomatoes and basil will also work great or how about some pan sautéed crimini mushrooms with onions? Scrumptious!!

Ingredients
- 3-4 tbsp Basil (roughly chopped fresh basil leaves)
- 3-4 Sweet Peppers (fine chopped - about 1/2 cup)
- 3 Tomatoes (Ripe Roma / Plum)
- 1 Baguette Bread
- 1-2 Garlic (cloves of garlic to rub on the bread for garlicy flavor - Optional)
- 1 tbsp Olive Oil (Extra Virgin)
- 1/2 White Onion (Small onion, finely chopped)
- 1 tbsp Lemon (Juice)
- 1/2 tsp Sugar
- Salt (to taste)
Directions

1. Clean and remove seeds from the sweet peppers and tomatoes and then finely dice all - onion, tomatoes, sweet peppers. -
2. In a bowl, add lemon juice, sugar, salt. Whisk it while adding oil slowly to create an emulsion. Add diced tomatoes, peppers and onion and stir well to combine. Add chopped basil to onion mixture just before serving. -
3. Slightly oil (optional) the Baguette Bread and toast it in preheated oven for 10 minutes or grill it on gas/charcoal grill till crispy. (Optional - Rub 1-2 cloves of garlic over grilled bread for yummy garlicky flavor.) Now, top it with marinated tomatoes and sweet pepper mixture just before serving and enjoy.
Savita's Recipe Notes:
This is a - slice and serve recipe, however, for best results, let the peppers and tomatoes marinate in lemon mixture for 20-30 minutes.
