Palmier [pahlm-YAY] also called palm leaves, or elephant ear cookies are made with puff pastry and sugar. Very quick and easy to make, Palmier resemble sweet little hearts. Making Palmier is so easy that you hardly need a recipe. It creates a gorgeous flavor explosion - sweet meets salty.

Ingredients
- 1/4 Cup Sugar
- 1 Puff Pastry
- 1 Egg(s) (Well Beaten)
Directions
- 1. Roll out the dough to a thickness of 1/6 inch. Sprinkle the dough with sugar so that the sheet is lightly covered.

2. Roll two opposite edges of the dough toward the middle to make a log. -
3. Cut the log into slices about 1/4 inch slices. Place the slices on a cookie sheet spaced widely enough to not touch each other when baking. Brush the top with egg wash for more golden brown color. (optional) -
4. Bake at 425° F for 8-10 minutes or till palmiers cookies are golden brown.

When you do use the egg? That is missing from the recipe. I would assume you beat it and then brush it over the tops of the cookies before placing into the oven.
