Today, I'm all excited about the SOUP SEASON! So thought to share my favorite collection of 37 delicious vegetarian soup recipes. Healthy, mostly vegan, and loaded with flavor. These soups are also filling, and mostly come with promise of one-pot meals. You can make many weekly dinner menu combinations with these.
You know what? I'm fan of such recipes when I'm busy entertaining.. During holidays, or long weekends or just when feeling under the weather in a cold winter day... A bowl of warm soup comes together quickly, warms the soul, and nourish body. Plus feeds the hungry family, a nourishing meal without much effort. No matter what day looks like.
A little about this soup recipes collection:
1) All soups are vegetarian (obviously) and a lot of these are also vegan.
2) There are 35 soups and 2 recipes for Homemade Vegetable Stock. BTW, these stocks can be delicious soups on it's own. Just add noddles and your favorite veggies with some protein - tofu, cooked lentils, steamed broccoli, mushrooms etc.
3) Soups are also mostly gluten free and nuts free. Every soup has indicator for the diet information.
I like to keep my soups filling so that these alone can serve the dinner. Serve a bread or steamed quinoa or rice on the side. For lighter, less loaded soups, I recommend serving just soup or a side of salad.
Oh, and all soups are freezer friendly. I recommend freezing a few for rainy days.
