Mix Fruit Salad with Roasted Potato Fries brings back one of my very vivid memory. In my home country, I used to visit a very famous book store on one of busy shopping plaza called - Connaught Place. More than looking for books, I always loved getting chance to eat from a "Fruit Chaat Wala" (Person selling
Fruit Chaat on the side of road in a small cart). He always roasted potato fries on a huge hot iron tawa (skillet) that filled whole plaza will amazing potato fries aroma. Once you place order for chaat, he will fill a bowl of fruit and ripe diced tomatoes, add some lemon juice, spices and top it with pan fried potatoes fries. Oh, super delicious and amazing!!!
I can still sniff the same aroma while writing this post - in my imagination of course. Today's salad is my take on that mouthwatering Fruit Chaat and a tribute to an excellent road side chef who made people lick their fingers eating his chaat.

Ingredients
Directions
- 1. Peel and dice the potatoes. Bring 2-4 cups of water to rolling boil. Add potatoes and let boil for about 5-7 minutes or till fork tender.
- 2. While potatoes are boiling, dice the fruits available into 2 inch cubes and place in a bowl. Mix in 1 tbsp lemon juice to prevent fruit from browning. Also mix rest of juice with salt, cumin powder, red pepper powder (if using), black pepper, and sugar in a separate bowl to make dressing.
- 3. Once potatoes are tender, transfer them to a paper towel to dry out water. Heat oil in a pan, add potatoes and let'em crisp until golden brown from all sides.
- 4. Transfer fruit to individual serving plates, top with potato fries and remaining dressing. Serve immediately. It tastes best when potatoes are still warm.
