Roasted Game Hen is my favorite dinner idea for two people. Whole roasted turkey can be overwhelming for a small family like ours. Turkey roast works perfect when you have big group of family and friends joining you for dinner.
Whenever, it is just two of us, we prefer to roast a smaller bird. This is economical and we can add that money towards our black Friday shopping and there will less space needed in refrigerator for leftovers.
What do you think? Do you do the same or am I the only one?
I have used a very flavorful Lemon-Pepper and blood orange rub for roasting this bird. blood orange not only makes bird moist, sweet and savory but also gives nice caramelized color to roasted bird.
To save some time, you can use store bought stuffing mix and add some fresh flavors to it like bell pepper, orange, sweet onions (if you like) for a perfect thanksgiving meal for two.

- 1. Preheat oven to 350 F. In a bowl, mix together, thyme, lemon-pepper seasoning and juice of 1 blood orange. Place the hen on a baking sheet pan lined with aluminium foil. Brush olive oil and melted butter all over the hen and sprinkle seasoning mixture and massage it to distribute it evenly. Season hen with salt and pepper. Fill cavity of hen with packaged stuffing, diced bell pepper and slices of one peeled blood orange.
- 2. Roast Hen in preheated oven for about 1 hour or until an instant-read thermometer inserted into the thick art of the thigh registers 165 degrees F and the juices run clear. Remove the hen from the oven, loosely tent with foil and let rest 10 minutes before carving or serving.
