Blueberry Clafoutis
Clafoutis Or Clafouti, is a baked French dessert made of cherries, arranged and baked in pancake-like batter. This simple yet so delicious recipe is traditionally made with cherries or prunes. Fruity berries like blueberry or black berry and even dehydrated prunes (dried plums) go perfect in Clafoutis. I have used fresh blueberries for this recipe. You can also use dried or frozen berries. Clafoutis batter is very easy to make. Clafoutis batter mixes up very easily in just one bowl. It has very simple ingredients, so as long as you have berries on hand, you can literally start making Clafoutis in moment’s notice. This warm and comforting dessert with hint of Cognac can make any evening special. I specially recommend this dessert for special Valentine evening. This valentine day, impress your valentine with this easy to make, easy on pocket scrumptious dessert.

  • 1. Soak blueberries in Cognac and warm water mixture for about 15 minutes. If using dried berries then soak for at least 30 minutes so that berries absorb Cognac flavor.
  • Step for Recipe - Blueberry Clafoutis 2. Preheat the oven to 400 F. Grease and flour two small individual size baking dishes and set aside.
  • Step for Recipe - Blueberry Clafoutis 3. In a bowl, whisk together 1 large egg (at room temp). Add sugar and keep whisking. Add flour and stir to combine. Now add heavy cream and melted butter. Make sure both are at about room temprature. Remove blueberries from Cognac and arrange in prepared baking dish. Add the soaking liquid to batter and combine well. Gently pour batter over the blueberries.
  • Step for Recipe - Blueberry Clafoutis 4. Bake the Clafoutis untill puffy and golden (about 30 minutes). If using individual baking dishes then serve warm in the same dish after dusting with powdered sugar. Or you can invert Clafoutis in serving tray, dust with powdered sugar and serve warm. Enjoy!!!
Savita's Notes:
I used single serving small baking trays to make individual Clafoutis since at my home no one wants to share his Clafoutis with anyone else. For charm of valentine day, you can make one big Clafoutis and enjoy sharing it with your valentine.

  1. Made this yesterday,absolutely amazing easy to make dessert. My blueberries were a little tart so I may add a little sugar and cook them a bit next time. Wanted to ask you, can I used canned peaches for your peach yogurt lol lies, next on my list:)
