Grilled asparagus is my all time favorite. This quick grilled asparagus recipe with simple vinaigrette is an excellent side salad which goes perfect with grilled meats, burgers or fried rice. I am not using any sweetener or honey in the vinaigrette to avoid some sugar calories, instead the natural sweetness of grapes and cherry tomatoes balances the flavor perfectly. If you like, you can add few raisins as another sweet element and good source of antioxidants.

- 1. To make the vinaigrette, combine lemon juice, salt and pepper in a bowl. Add 1 tbsp olive oil at slow stream while whisking the vinaigrette continuously.
- 2. Discard 2 inch of stems from bottom half of asparagus, Drizzle with 1 tbsp olive oil and coat well. Grill on open flame or on a hot grilling pan till asparagus has char marks and is tender (about 3-4 minutes) Additional Notes: Always wash the cherry tomato, grapes and Asparagus before using.
- 3. Dice the grilled asparagus into 1 to 1 and 1/2 inch pieces. Arrange tomatoes, grapes, lettuce in individual serving plates. Top with asparagus and drizzle with 1 tbsp of vinaigrette. Enjoy this fresh char flavored salad with grilled lamb burgers.
Savita's Notes:
To keep Asparagus fresh longer in refrigerator, submerge stems in 1/2 inch water. Just cut 1/2 inch hard stems from bottom and then let the asparagus bunch stand in water.
