What are your favorite holiday dinner sides? Curried Yellow beets hash always make its place on my thanksgiving dinner table. Among all beets variety, yellow and dark red beets are my favorite. We often roast red beets and top with some goat cheese for quick and healthy side dish for dinner.

Yellow beets are not too sweet like red beets and I love their lush golden color. So very festive!

Yellow beets hash has mild curry flavor, sweetness of beets and almost caramelized onions, crunchy peanuts and slight tang of lemon juice to balance everything. Perfect sweet and tangy, easy side dish for heavy meat dinners. You can also add 1-2 small diced yukon gold potato in this hash for a more filling side.

Lets jazz up holiday side with some sweet and flavorful curried golden beets this thanksgiving.

Ingredients

  • 1/2 Cup Peanuts
  • 3-4 Beet Root (Yellow Beet Roots diced into small bite sizes)
  • 1 White Onion (or yellow onion small diced)
  • Salt and Black Pepper (per taste)
  • 1/2 tsp Curry Powder
  • 2 tbsp Lemon (Lemon Juice)
  • 1 tsp Mustard Seeds (Optional)
  • 1/2 Jalapeno (remove seed if you prefer less hot and mince very fine)
  • 1 tbsp Canola Oil

Directions

  • 1. Heat 1 tbsp oil in a pan, add peanuts and mustard seeds and fry the till peanuts look crisp (do not let them burn- watch carefully, it takes only 2-3 minutes for peanuts to get crispy in hot oil.) and mustard seed start to blacken.
  • 2. Add chopped onion, green pepper and saute till onion are soft (3-4 minutes)
  • 3. Add curry powder and saute for 30 seconds. Now add yellow beets and cook til beets are tender and slightly caramelized (10-15 minutes). Add lemon juice, season with salt and black pepper per taste and serve. Enjoy!!
