Better Than Green Beans - Vegan Kimchi Garlic Asparagus

Everyone expect a side of blanched/stir-fried/baked green beans on holiday dinner table..... But, you can bring some pizzazz to dinner with surprise of stir-fried asparagus instead of omni-expected green beans this year! Kimchi, soy, and garlic, even though all these ingredient speak Asian stir-fry lunch, this side has finesse to accompany any grand family-style dinner.

4) Healthy, great source of dietary fiber, folate and Vitamins. Trust me, you need this with comforting calorie-rich holiday food.
Even if you planning to have a lite dinner this thanksgiving, this Asparagus will be ready in 10 minutes and taste great with any kind of roasted or grilled meat.
Keeping all these holiday posts simple, saying less and sharing more. I decided to take yesterday off.... so.... couldn't share day three of the event post with you all. I am hoping to make up for the missed day this coming week.

Better Than Green Beans - Vegan Kimchi Garlic Asparagus

- 1. Wash and drain the asparagus on a paper towel. Trim the bottom 1-2 inch, hard stem of the asparagus. Chop garlic and set aside. Mix chopped kimchi, soy sauce and 1 tbsp water in a small bowl and set aside.
- 2. In a wide pan, heat oil, add chopped garlic, and half of the red pepper flakes, Let garlic perfume the oil for 30 seconds. Throw in asparagus and stir fry constantly until asparagus are 60% cooked, about 2-3 minutes. Then, add kimchi-soy mix and stir fry on high heat for another 1-2 minutes. Asparagus should be still green and crunchy, not wilted or yellow. Additional Notes: Asparagus don't need more than 3-4 minutes to cook, longer cooking will make asparagus mushy, wilted and yellow. For best results, after 3 minutes remove one asparagus stem and test for done-ness.
- 3. Taste and adjust salt and black pepper if need. Transfer to serving platter. Spoon kimchi sauce in the pan over asparagus. Sprinkle remaining red pepper flakes (as per taste) and serve immediately.

This garlic asparagus recipe looks great! I love cooking stuff like this. I always try to find new recipes on forums and I got great ones emailed to me and I loved it!
