Savory Puff Pastry Turnovers with Curry Infused Potatoes and Sweet Pea Filling are a perfect make ahead snack. Curry Infused Potatoes filling is very easy to make and goes perfectly with these tasty little treats. You can always make these ahead of time up to the cooking stage and then freeze for later use. Puff Pastry can be used for savory dishes as well as desserts. If you do not have the time to make your own homemade puff pastry, most markets sell it pre-made, usually in the frozen food section.

1. Preheat oven at 400 degree F. Boil a pot full of water. Peel and dice potatoes into 1/2 inch squares and pour in boiling water till potatoes are fork tender.2. Heat oil in a pan and add chopped onions and fry till translucent. Add finely minced garlic and continue frying for 1 more minute. Add turmeric powder and red pepper powder and fry for 2 minutes.

3. Now add boiled potatoes and salt. Fry till potatoes are slightly mushy. Mix in coriander powder, thyme, chopped fresh green chilli peppers , chopped fresh cilantro and blanched sweet green peas. Mix well and allow potatos mixture to cool down (room temprature)4. Cut 4" by 4" squares of pastry sheet. Place a heapful teaspoon of potato mixture in the centre and fold diagonally, pinching at the edges to create turnovers (triangle in shape)

5. Place puff pastry turnovers on baking sheet / silicon mat lined baking tray leaving 1" space between adjacent puff pastry turnovers. Brush egg on the open side of turnovers for golden brown turnovers.6. Bake at 425° F for 15 minutes or till puff pastry turnovers are golden brown and flaky. Additional Notes: The oven must be preheated to a high temperature, usually 400° to 450° F. If the oven is not hot, the butter will melt and the moisture will evaporate before steam can create layers.

To handle Puff Pastry dough, always work on a lightly floured surface. If using homemade dough, take a piece and roll it out to the thickness of 3-4 sheets of copier paper.
